Afternoon Nut Cake Recipe

  • 350g plain sifted flour
  • 300g castor sugar
  • Salt to taste
  • 6 eggs
  • 350g soft butter
  • 2 tsp baking powder
  • Dash of bicarbonate of soda
  • 125g ground mixed nuts
  • 250ml pineapple juice
  • Vanilla


  1. Beat the eggs with the sugar till creamy, adding a little butter at a time to blend.
  2. Gently fold in all the dry ingredients and add the pineapple juice and vanilla.
  3. Bake cake in a greased and lined loaf or 10″ round cake tin till firm in a pre-heated oven of 150°C.
