Apricot Tart Recipe

Ingredients:

      Base:

      • 115g margarine or butter
      • 1 egg
      • 1 tsp baking powder
      • 4 tbsp sugar
      • 130g wheat flour

          Filling:

        • 6 tbsp stewed apricots with sugar or apricot marmalade
        • 1 small can apricots

            Garnish:

          • Grated nuts and granulated sugar

        Method:

        1. Cream together the butter and sugar.  Add the egg, beating well
        2. Add the flour mixed with the baking powder. 
        3. Spread about two thirds of the pastry over the base and sides of a pie dish.  Spread about two thirds of the pastry over the base and sides of a pie dish.  Spread the apricot marmalade or stewed apricots on the bottom. 
        4. Cover with slices of canned apricots.  Add the grated nuts to the rest of the pastry and put it in lumps on the tart.  Sprinkle with granulated sugar.
        5. Bake at 200°C for about half an hour. 
        6. Serve warm with vanilla sauce or vanilla ice-cream.
